Ingredients
1 tin Jamaica Sun Breadfruit;
Drained
30ml vegetable oil;
2 medium onions;
Chopped
4 tomatoes;
Diced
500g meat;
Cut
4 tsp Tropical Sun All Purpose Seasoning;
Tropical Sun Ground Black Pepper to taste;
1 x 285g tin Jamaica Sun Callaloo;
150g cheese grated.
Preparation
Season meat with 2 teaspoons of Tropical Sun All Purpose Seasoning. As they say in Jamaica, “you mus' put he down overnight” or marinate the meat overnight in the refrigerator. Alternatively, marinate for at least one hour. Bake Jamaica Sun Breadfruit at 160ºC for 60 minutes (Breadfruit is ready when a fork is easily inserted
into it). In a large saucepan, heat oil. Simmer onions until brown. Add the seasoned meat and simmer. Add the tomatoes, the remaining Tropical Sun All Purpose Seasoning and the Tropical Sun Ground Black Pepper. Continue to simmer until the meat is cooked. Dice the partially cooled Breadfruit.
Place half of the diced Breadfruit in a lightly greased casserole dish. Then layer the Breadfruit with half of the cooked meat, followed by half of the Jamaica Sun Callaloo and finally half of the grated cheese. Repeat layering with remaining ingredients. Bake at 180ºC for 40 minutes, or until the cheese is golden brown. |
