Ingredients
4 skinless, boneless chicken breasts;
1 tbsp soy sauce;
4 tbsp Jamaica Sun Jerk Seasoning.
Preparation
With a fork, poke some holes in the chicken. Sprinkle the soy sauce over the chicken and then rub the jerk seasoning into the breasts. As they say on the islands, “you mus’ put he down overnight” or marinate the chicken overnight in the refrigerator. Alternatively, marinate for at least one hour. Grill over hot coals on an outdoor barbeque and cook for about 30 minutes turning the chicken occasionally. Alternatively, preheat your oven to 190C and roast the chicken for about 45 minutes or until the juices run clear. For an authentic Jamaican meal, serve with rice and peas. Enjoy! |
